My good friend joined my family for dinner tonight, so we had a healthy taco feast!
To celebrate the season, we made a fresh peach salsa from diced peaches, red onion, and parsley. We also used turkey instead of ground beef. Delicious healthy toppings included avocado, black beans, tomatoes, shredded lettuce, jalapeños, red pepper flakes, low fat shredded cheese, and salsa.
I think this would be a great set up for fish tacos, too- they would be so light and sweet with the peaches!
After 1 shell, I just want the flavorful fillings, so I made a taco-plate. Still just as delicious when you use a fork!
