I’m taking a rest day again today. I’m going to focus on my food. I feel like I hit a plateau. I’ve been eating healthy 80/20. Water all day every day. I exercise sometimes three times a day.I wish I was at the beach reading. #picstitch #food #focus #weightloss #reading #zombies #beach #happiness #self #esteem #healthycurves #rest #day #nature #ny

Fell in love at the Asian food market!! When I was living in Hawaii I mainly shopped at an Asian food store so finding out that there is one down the street from my house literally is the best new ever! I picked up rice paper because its only 80 calories per wrap compared to the normal 300 for this size! I also got spring roll shells which are only 20 calories per wrap, wonton papers,a coconut bean soup, taro root tapioca pearls, udon and I tried this canned oatmeal thing.I have to say everything is great except the oatmeal-_- Anyways just sharing this because I’m sooooo excited!
Zucchini Bites
Jazz up your pizza! The next time you want to make mini pizza bagel bites, try using zucchini slices as the crust instead. It’s an easy way to add some more vegetables to your snack routine. Purchase a zucchini from a healthy and local food source like Philly Go Fresh. Sign up for our free e-newsletter so you can be the first one to our site when it launches. The healthy food revolution is coming, and you don’t want to miss it.
Cut one or two zucchinis (the more bites on your plate, the merrier) into quarter inch slices. Spray or brush on some olive oil to both sides so they won’t stick when you cook them. Grill them for about two minutes per side. Then, add pizza sauce and cheese and broil it for another minute. Watch out for your cheese. You don’t want it to burn.
We recommend using your own homemade pizza sauce, using fresh tomatoes from a fresh vegetable vendor.
This recipe from Sunset is simple and takes an hour and a half to make. We suggest making double and putting it into your freezer for later usage. You never know when you’re gonna need that pizza sauce for some more zucchini bites!
